Method

  1. Combine the egg with sugar and salt, whisk until uniform.
  2. Pour in the milk and melted butter (not hot).
  3. Add all the dry ingredients (flour, almond flour, baking powder), and combine.
  4. Add the lemon zest, lemon juice and chopped (or grated) avocado.
  5. Mix everything until uniform. Fill the molds with the batter.
  6. Bake at 338F (170C) for about 30 minutes.
