Method

Step 1

First, you will need:

  • 250 g sugar | 8.80 oz
  • 75 g trimolin (#1) | 2.65 oz
  • 75 g water | 2.65 oz
  • 75 g currant puree | 2.65 oz

Place all the ingredients in a high saucepan with a thick bottom. Boil it down to 120C (248F).

Step 2

Next, take:

  • 180 g water | 6.35 oz
  • 18 g gelatin | 0.65 oz
  • 110 g trimolin (#2) | 3.90 oz
  • 1 g lemon acid | 0.05 oz

Soak the gelatin in water. As it swells, put it in a bowl, and add the trimolin. When the temperature of the syrup is 116C (241F), start whipping at a high speed. Add the syrup in a thin stream, and switch the speed to maximum. At the end, add the lemon acid diluted with a drop of water. The mass turns out to be very lush, soft and tender. Place it in a pastry bag with a round nozzle. Place the strips on a silicone mat greased with vegetable oil. Leave it for 8 to 12 hours. Sprinkle the strips with a mixture of the powdered sugar and the starch; make the knots.
