Method
- Peel the apple, and grate it on a coarse grater.
- Pour the lemon juice over, and set the grated apples aside.
- Whip the butter with sugar until fluffy and light.
- Then add two eggs in turn, mixing well each time.
- Combine the flour with baking soda, and mix it into the dough.
- Then stir in the grated apples along with the juice.
- Pour the batter into muffin cups, filling them 3/4 full.
- If desired, decorate the muffins with apple or plum slices, and sprinkle with brown sugar and cinnamon.
- Bake the muffins for about 20 minutes, until a wooden stick inserted in the center comes out completely dry.
