Hard cheese choux cookies

If you have some hard cheese pieces left in the fridge, then you should try to cook these unusual but at the same time super delicious snack cookies. But be careful, as they will dissapear immediately ;)

Hard cheese choux cookies

Method

  1. Pour the water into a small saucepan; add diced butter and salt, and bring to a boil.
  2. Pour all the flour into boiling water at once, remove from heat and quickly stir until smooth.
  3. Let the dough cool for a few minutes, then add 1 egg and stir with a spoon or a mixer.
  4. Then add the rest of the eggs one at a time, mixing thoroughly each time. You will end up with smooth batter that falls off a spoon easily.
  5. Add the grated cheese and transfer the dough to a pastry bag. * You can use a tight zip bag by cutting off the tip.
  6. Pipe small cookies on a baking sheet lined with baking paper at a distance of 1.5cm from each other.
  7. Bake in the oven preheated to 392F (200C) for about 15 minutes. Then lower the temperature to 329-338F (165-170C), and bake for about 7-10 more minutes until evenly golden brown.
