Method
- Pour the water into a small saucepan; add diced butter and salt, and bring to a boil.
- Pour all the flour into boiling water at once, remove from heat and quickly stir until smooth.
- Let the dough cool for a few minutes, then add 1 egg and stir with a spoon or a mixer.
- Then add the rest of the eggs one at a time, mixing thoroughly each time. You will end up with smooth batter that falls off a spoon easily.
- Add the grated cheese and transfer the dough to a pastry bag. * You can use a tight zip bag by cutting off the tip.
- Pipe small cookies on a baking sheet lined with baking paper at a distance of 1.5cm from each other.
- Bake in the oven preheated to 392F (200C) for about 15 minutes. Then lower the temperature to 329-338F (165-170C), and bake for about 7-10 more minutes until evenly golden brown.
