Healthy ginger cookies with spices

dark chocolate (60% or more)

Method

  1. Soak the nuts overnight, and rinse well in the morning. Soak the dates for 20 minutes, rinse, remove the seeds.
  2. In a blender, grind all ingredients except chocolate until sticky.
  3. Shape into cookies and place in the freezer for 15 minutes.
  4. Melt chocolate using a water bath, dip the cooled cookies in the chocolate and leave in the fridge for a few minutes until the frosting is set.

Done! Sprinkle the cookies with coconut flour or powdered sugar, and enjoy!
