💜 Preheat the oven to 356F (180° C)
Grease the Madeleine molds with butter.
💜 To make the lavender sugar, put the sugar and lavender in a bowl and grind with your fingers.
💜 To make the dough, put the flour, baking powder, lavender, eggs, melted butter, honey, and vanilla in a bowl, and mix until smooth.
💜 Place the dough in the molds using a tablespoon or a pastry bag;
Bake for about 10 minutes until the Madeleines are browned and have doubled in size;
To check, stick a wooden stick in the center. It should come out completely dry.
💜 Roll hot cookies in lavender sugar and place them on a rack to cool.
