- Heat the cream and the glucose to 80C (176F); add the zest and the matcha tea, and stir. Cover the mix with foil, and leave it for 10 to 15 minutes.
- Melt the chocolate with the cocoa butter. Combine the cream with the chocolate, and add the lime puree; mash with a blender. Add the alcohol, and whisk. Cool the mass to 35-38C (95 to 100F), and add the cold butter; punch the ganache with a blender. Cover it with foil in contact, and put in a cool place (18C | 64F) for further crystallization (for at least 12 hours).
- Remove the film, and roll the balls; pour over the tempered white chocolate.
