Method
- Combine the flour, cocoa, baking powder and salt.
- Whip the eggs with sugar and vanilla sugar until stable foam.
- Melt the butter and all the chocolate. Bring the mix to 95-100F (35-38C).
- Add the creamy-chocolate mass to the whipped eggs with sugar, and mix with a whisk.
- Sift the dry ingredients, and mix.
- Pour the dough into a bag.
- Pipe the cookies on baking paper at a distance from each other.
- Bake the cookies at 347F (175C) for 10-12 minutes.
