Olive oil tea cakes

Olive oil tea cakes

Ingredients

Tea cakes

sugar / coconut sugar
60g

4tbsp
spelt flour
80g
2.80oz
0.32cup

olive oil
50g

baking powder
1tsp
frozen berries

Method

  1. Whip the eggs with sugar for at least 5 minutes until fluffy.
  2. Mix the flour with baking powder.
  3. Add olive oil to the egg mixture, and gently stir with a spatula.
  4. Add the flour, and mix again carefully.
  5. Add the frozen berries to the dough, and arrange it in molds.
  6. Bake the tea cakes in the oven preheated to 356F (180C) for about 13-15 minutes. It's important not to overdry the pastry!
