Method
- Whip the eggs with sugar for at least 5 minutes until fluffy.
- Mix the flour with baking powder.
- Add olive oil to the egg mixture, and gently stir with a spatula.
- Add the flour, and mix again carefully.
- Add the frozen berries to the dough, and arrange it in molds.
- Bake the tea cakes in the oven preheated to 356F (180C) for about 13-15 minutes. It's important not to overdry the pastry!
