This time we will show you how to make an insanely delicious pistachio ganache for filling macarons.
You will need:
- 130 g sugar | 4.60 oz
- 60 g water | 2.10 oz
- 80 g egg yolks | 2.80 oz
- 110 g butter | 3.90 oz
- 40 g pistachio paste | 1.40 oz
Whip the egg yolks in a mixer bowl. Place the sugar with water on the heat, and cook up to 120C (248F). Slowly pour the syrup into the yolks in a thin stream, continuing to whip them at a medium speed.
Increase the mixer speed, and keep whipping until the mixture cools down to 40C (104F).
Add the butter and pistachio paste in several passes. Stir the ganache, and refrigerate it for several hours to stabilize.
