Method
The base
- Remove the pit from the dates, and cut the fruits into pieces. * If you use it dry - pour it with boiling water for 5-10 minutes.
- Then grind with a blender. If it doesn't grind well, add some water.
- Grind the nuts with a blender, and mix with dates.
- Tamp that sticky mass on the bottom of a detachable mold, and put it in the fridge.
Soufflet
- Soak all the gelatin in 100g (3.50 oz) of applesauce for 30-40 minutes.
- Place the remaining applesauce in a mixer bowl, add vanilla or cinnamon.
- Melt the swollen gelatin in the microwave, and pour into the mixer bowl, constantly whisking the mass.
- Whip it on high speed until the mixture doubles in size and gets light in color. This may take about 10 minutes.
- Pour the whipped mass over the date fruit base, and put in the fridge.
- Let it harden for about 4-5 hours.
