Method

  1. In a bowl, combine flour and salt. Add cubed cold butter and rub until the mixture resembles coarse crumbs.
  2. In a separate bowl, mix sour cream and egg, then add to the flour mixture. Knead the dough, wrap it in plastic wrap, and refrigerate for an hour.
  3. For the filling, if using frozen cherries, strain excess water once thawed. Mix cherries with sugar and cornstarch.
  4. Divide the dough into two parts (one larger, one smaller - roughly 2/3 and 1/3 of the dough). Roll out the larger portion and press it into a pie dish (about 22 cm). Chill in the freezer for 15 minutes. Sprinkle the bottom with breadcrumbs and add the cherry filling. Roll out the smaller portion and cover the pie, then brush with egg yolk. Bake at 175°C for about 40 minutes.

Important: To prevent the filling from spilling, cool the pie and refrigerate it after baking.
