The dough

Pass the cottage cheese through a sieve, add eggs, and then mix in the flour. Form the dough into a ball and wrap it in plastic wrap. Place it in the refrigerator for 30 minutes.

After 30 minutes, roll out the dough on parchment paper, covering it with plastic wrap.
The filling

Arrange the apple slices on the rolled-out dough, sprinkle with cinnamon, and drizzle with honey or Jerusalem artichoke syrup to taste.

Fold the edges of the dough over the apples, creating a rustic, free-form shape.

Preheat the oven to 180°C (356F) and bake the galette for 30-35 minutes, or until the crust is golden brown and the apples are tender.

Before serving, drizzle the finished galette with honey.
