Method

The dough

  • Pass the cottage cheese through a sieve, add eggs, and then mix in the flour. Form the dough into a ball and wrap it in plastic wrap. Place it in the refrigerator for 30 minutes.

  • After 30 minutes, roll out the dough on parchment paper, covering it with plastic wrap.

The filling

  • Arrange the apple slices on the rolled-out dough, sprinkle with cinnamon, and drizzle with honey or Jerusalem artichoke syrup to taste.

  • Fold the edges of the dough over the apples, creating a rustic, free-form shape.

  • Preheat the oven to 180°C (356F) and bake the galette for 30-35 minutes, or until the crust is golden brown and the apples are tender.

  • Before serving, drizzle the finished galette with honey.
