It's time to share an amazing recipe for a spicy macaroons filling with gorgonzola and passion fruit flavors. For all the blue cheese lovers, this filling will cause a total eruption of the taste buds. Gorgonzola can be replaced with the dorblu.

You will need:

  • white chocolate 200 g | 7.05 oz
  • cream 33% 50 g | 1.75 oz
  • passion fruit puree 50 g | 1.75 oz
  • butter 10 g | 0.35 oz
  • gorgonzola | 0.00 to taste

Ganache cooking

Weigh the chocolate, heat the puree; heat the cream separately. If you heat them together, then the cream will curdle. Pour the puree over the chocolate, and stir gently so that it starts melting. Pour out the cream. Mash the mass with a blender to get an emulsion. Add the room temperatured butter, and mash again with a blender until smooth and “shiny” ganache. Cover it with foil in contact, and place the ganache in the fridge. Let it stabilize for 5 hours, and place it in a pastry bag; stuff the macaroons. The ganache can be whipped before use, so it will become fluffier.

Put a small cheese cube in the center. Leave the macaroons overnight, so that they are soaked and get absolutely divine!
