Method

Here is a recipe for a juicy vegetable galette with curd cheese! Fragrant dough, fresh seasonal vegetables and subtle salty taste of curd cheese... You will lick your fingers!

Dough

For the dough:

  • 100 g butter | 3.55 oz
  • 200 g flour | 7.05 oz⁣ ⠀
  • 0.5 tsp salt | 1.00 tsp
  • a bundle of greens | 1.00 bundle⁣⁣ ⠀
  • a couple of garlic cloves | 2.00 cloves⁣ ⠀
  • 4 tbsp water | 4.00 tbsp

Grind the cold butter with the sifted flour; add the salt, finely cut greens and garlic, and knead everything into crumbs. Pour the water, and knead the dough; place it in the fridge for half an hour.

Filling

Meanwhile, cook the filling.

Cut the vegetables into slices (eggplant, zucchini, tomato, bell pepper), and chop the greens finely.

Galette forming

Roll out the dough in a circle, and grease it with the curd cheese; lay out the vegetables in a circle, and wrap the edges. Sprinkle the vegetables with salt, pepper, herbs and any vegetable oil. Grease the galette with the whisked egg.⁣

Bake the galette in the oven, preheated to 200C (392F) for 40 to 45 minutes.
