Method

  • Rub the briquette cottage cheese through a strainer.
  • Add the yolks, sugar, vanilla extract or vanillin, and 50g | 1.76 oz of rice flour. Combine with a fork.
  • Sprinkle about 30g | 1.05 oz of rice flour over the work surface.
  • Form the cottage cheese pancakes with wet hands and roll them in the flour.
  • Fry in a non-stick pan over low heat under a lid for 3 to 4 minutes. Use a small amount of vegetable oil. Coconut oil is perfect.
  • Cook them on each side until golden brown.
