Method
- Rub the briquette cottage cheese through a strainer.
- Add the yolks, sugar, vanilla extract or vanillin, and 50g | 1.76 oz of rice flour. Combine with a fork.
- Sprinkle about 30g | 1.05 oz of rice flour over the work surface.
- Form the cottage cheese pancakes with wet hands and roll them in the flour.
- Fry in a non-stick pan over low heat under a lid for 3 to 4 minutes. Use a small amount of vegetable oil. Coconut oil is perfect.
- Cook them on each side until golden brown.
