- Whip soft butter, powdered sugar, vanilla sugar and salt.
- Add the curd (cottage) cheese, and whip.
- Add the flour and baking powder, and knead the dough.
- Wrap the dough in cling film, and refrigerate it for 2 hours.
- After rolling it out, cut out 7cm (2.75 inch) circles.
- Sprinkle the circles with sugar, fold in half, press lightly, and again in half.
- Bake the cookies at 347F (175C) with convection, until golden brown.
You better cook two servings if you have kids :-)
