Here is a recipe for fragrant lemon cookies. Dedicated to all the lemon tea lovers.⠀
These are delicious cookies with a pleasant lemon flavor and aroma. It’s spicy from the inside and crispy from the outside, with a crumbly crust. The cookies are very easy to cook; try it!
Dough
First, combine the eggs, the fat, sugar, milk and the lemon zest; then add some flour mixed with the baking powder, and finally knead the rest of the flour by hand. Place the dough in the fridge for 2 hours.
Filling
Whisk the egg whites with the sugar until stiff; add the ground almonds, the zest and rum.
Assembling & baking
Roll out the dough, and cut out the circles; place a teaspoon of the filling on each circle. Roll the cookies up (like in the pictures). Squeeze/connect the edges. Place the cookies on a baking sheet lined with the parchment paper. Bake it at 160C (320F) for 20 minutes. Chill the cookies.
Decorating
Divide the ingredients for the decoration: the yellow part should be much bigger, as only the tips of the lemons will be green. If you want, you can make the cookies completely yellow. Mix the milk, the rum and food coloring. Dip each lemon cookie in the resulting mixture, and roll it in sugar.
