Cooking instructions

  1. Whip the soft butter with sugar and vanilla.
  2. Whisk the egg and a yolk and a pinch of salt, using a fork; add them to the butter mass in passes (don’t stop whipping). Next, add the lemon zest and the finely chopped mint leaves. Mix the sifted flour with the starch and the baking powder; knead the dough.
  3. Place the dough in a plastic bag, and put it in the freezer for 15 to 20 minutes. Next, roll it out between two sheets of parchment 0.5 cm (0.2 inch) thick, and cut out the cookies.
  4. Bake the cookies for 10 to 12 minutes in the oven preheated to 180C (356F), until the bottoms get slightly brown.

Be sure to cover the cooled cookies with the glaze. To make it, just mix the lemon juice and the powdered sugar.
