Raspberry muffins with streusel

One of the easiest recipes! You can even cook without a mixer, just combine everything with a whisk. I usually make these muffins with apple slices and streusel topping, and today with raspberries and almond flakes.

cold butter cubes

Method

  1. Preheat oven to 356F (180C).
  2. Mix all the ingredients for the streusel with your hands until crumbly and set aside.
  3. In a large bowl, beat the eggs, yogurt, milk, butter, zest and sugar with a mixer. Separately mix the flour and baking powder and add to beaten ingredients. Mix until smooth.
  4. Add the raspberries to the batter and mix gently.
  5. Grease the baking molds with butter, sprinkle with flour (or use muffin paper) and fill 3/4 full. Sprinkle with streusel on top.
  6. Bake for 25-30 minutes until golden brown (dry toothpick).
